     Roasted Leek and Sweet Potato Salad

Ingredients
1 kg sweet potato, cut into chunks
1 large leek, sliced into 2 cm pieces
50 g thinly sliced pastrami
mixed salad leaves
1/2 cup greek yoghurt
1 1/2 teaspooons seeded mustard
olive oil
 

Instructions
Place the sweet potato and leek in a roasting dish. Drizzle with olive oil and roast for 40 mins at 190 °C.
Wash salad leaves. Mix mustard and yoghurt together in a seperate bowl.
Combine sweet potato, leek, salad leaves and pastrami in a bowl. Toss to combine. Serve with yoghurt dressing.
