     BEAN AND BARLEY SALSA

Ingredients
3/4 C. quick cooking barley
1 can (16 oz.) kidney beans (drained and rinsed)
1 can (15 oz.) black beans (drained and rinsed)
1 can (11 oz.) whole kernel corn (drained)
1 large sweet red pepper (finely chopped)
6 green onions (finely chopped
DRESSING
3/4 c. olive oil
1/3 c. red wine vinegar
 
1 1/2 tsp. chili powder
3/4 tsp. salt
3/4 tsp cumin.
2 cloves garlic (minced)
1/4-1/2 tsp. crushed red pepper flakes
1/4 tsp. pepper

Instructions
Prepare barley according to package directions. Transfer to large bowl; stir in beans, corn, red pepper, and onions. In a small bowl, combine dressing ingredients. Mix well and pour over salad; toss to coat. Chill before serving.
Serving Suggestions
This can be eaten by itself as a salad or eaten as a salsa with chips.
