Mix dry ingredients in a large heavy saucepan and stir in milk. Bring to a boil over medium heat stirring constantly. Boil without stirring to 234F(soft ball). Use candy thermometer and don't let it touch the bottom of the saucepan. Remove from heat and add butter and vamilla. Do not stir. cool at room temp to 110F. Beat till fudge thickens and quickly spread into pan. Add pecans if you want when you add the butter and vanilla. Cool
