3 cups cake flour
2 tsp baking powder
1/2 tsp salt
1 cup butter
1` 1/2 cup sugar
3 eggs
1/2 tsp vanilla
1/2 tsp coconut extract
1 can (13.5)oz coconut milk
1 cup sweet coconut flakes finely chopped

Heat oven to 350. grease pans. In a large bowl whisk together flour, baking powder and salt. In another large bowl beat butter and sugar on medium till light and fluffy. Beat in eggs one at a time. Add vanilla and coconut extract and mix. On low speed beat in flour mixture in three additions alternating with the coconut milk. Beat well after each addition. fold in chopped coconut. Divide equally into pans. Bake at 350 for 40minutes or until toothpick comes out clean. Cool completely before icing.
This cake is very dense like a pound cake. Very coconutty. If you love coconut you will like this cake.. Frost with icing of your choice or use my buttercream birthday cake icing and then cover in coconut!
