     Mahogany Roast Turkey

Ingredients
1 16-pound turkey
1/2 teaspoon salt
1/2 teaspoon black pepper
1 onion, chopped
2 carrots, peeled and halved crosswise
2 ribs celery, halved crosswise
1/4 cup low-sodium soy sauce
1/4 cup maple syrup
1/4 cup (1/2 stick) unsalted butter, melted
 
4 cups chicken broth
1/2 cup white wine
6 tablespoons flour

Instructions
Turkey- Heat oven to 450°F. Season turkey cavity with salt and pepper. Stuff with onion, carrots and celery. Tie up legs or tuck them into flap of skin. Place turkey in a large, deep roasting pan; roast at 450°F for 30 minutes.
Whisk soy, maple syrup and butter in a bowl.
Reduce oven temperature to 350°F. Roast turkey at 350°F, basting every 15 minutes with soy sauce mixture, for 1-1/2 hours or until instant-read thermometer inserted in thickest part of thigh registers 180°F. Remove from oven; tent with foil.
Gravy- Scrape pan drippings into a fat separator. Pour de-fatted liquid into a medium-size saucepan. Add chicken broth and wine. Whisk in flour and cook for 5 minutes or until thickened.
