     MEAT LOAF

Ingredients
1 1/2 lb. ground beef
1 small onion diced
1/2-3/4 c. bread crumbs or crackers
1 tsp. salt
1 tsp. pepper
1/4 c. minced garlic
2 eggs
1/2 c. ketsup
 
Instructions
Mix all ingredients by hand until well blended. Place in loaf pan and place in 350º oven for 30-35 minutes. Let cool before slicing.
Instead of ketsup, I sometimes use 1 c. salsa.
