Cook rice and put in refrigerator for at least 2 hrs.
Heat 1 tablespoon oil in skillet to coat entire bottom. Add eggs and cook until set. Avoid stirring but gently lift cooked layer of eggs to allow uncooked portion to flow underneath. Remove eggs to plate. Shred into strips with knife.
Heat 3 tablespoons oil in skillet for 2 mins. Add ham, onion and vegetable stir fry briefly- add rice and eggs. Blend in soy sauce and sugar. Mix thoroughly. This may be kept warm in oven.
