     Peanut butter surprise cookies

Ingredients
1 1/2 cups flour
1/2 cup unsweetened cocoa powder
1/2 tsp. baking soda
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter, softened
1/4 cup peanut butter
1 tsp. vanilla extract
1 egg
 
3/4 cups confectioners sugar
3/4 cups peanut butter
Instructions
Preheat oven to 375. In a small bowl, blend flour, cocoa, and paking soda. mix until well blended. In a seperate large bowl, beat sugar, butter, and 1/4 cup PB until light and fluffy. Add vanilla and egg then beat. Stir in flour mixture until well blended. Set aside.
To make filling- conbine confectioners sugar and PB (3/4 cup). blend well.
Roll filling into 1 inch balls. Surround each PB filling with the chocolate dough (trying to make the chocolate outside into a thin layer and try to avoid having any PB show through). Place each on the baking sheet about two inches apart. Dip the bottom of a glass or something with a pretty design into sugar adn gently press down on each ball flattening it so the chocolate slighlty cracks.
Bake for 7-9 minutes.
