     Mashed Potatoes

Ingredients
5 lbs. russet potatoes
1 to 2 sticks butter (softened)
1-8 oz. package cream cheese (softened)
1/4 to 1/2 cup half and half
salt and pepper to taste 1/2 to 1 tsp. of each
 

Instructions
Boil quarted potatoes until very soft but not falling apart. Pour drained potatoes back into pot and keep over low heat to evaporate the excess water and mash the potatoes with masher. Turn off heat. Add 1 stick of butter; combine. Then add the cream cheese and combine. Finally add teh half and half. When smooth and creamy, add the salt and pepper to taste.
Can top with butter, and store in fridge overnight. Bring to room temperaturethe next day. Put out on counter the morning of and reheat with foil on for about 20 minutes right before serving.
