     Basic Fruit and Nut Muffins

Ingredients
1/2 cup refined coconut oil, melted, or safflower oil
2 cups whole wheat pastry flour
1/2 cup dry sweetener
1 tbsp Ener-G egg replacer
2 tsp baking powder
1/2 tsp fine salt
1 1/4 cup soy milk
1 tsp vanilla
1 cup fresh or dried fruit
 
1/2 cup chopped nuts

Instructions
preheat oven to 375 degrees. grease standard muffin pan, or use liners.
in a large bowl combine flour, sweetener, baking powder, salt, and egg replacement. in a medium bowl, whisk soy milk, oil, and vanilla. add the milk mix to the flour mix until barley combined. stir in fruit and nuts. divide evenly among muffin liners, and bake 15-20 minutes.
