Boil chicken in spices of choice, chilli powder, garlic etc. until done..chop chicken into small pieces. cut anahiem peppers into thin strips and pan fry.microwave corn tortillas until soft.
Add one forth cheese, chicken, peppers, taco sauce, spicey ranch dressing,to taste into a bowl, can if black beans if desired
Fill each tortilla with chicken filling. Roll up enchiladas. put in pyrex dish. fill up as many as possible for pan.. pour enchilada sauce over entire pan shift a little so it goes to bottom too. put rest of cheese on top.add cilanto to inside or on top of this recipe.
bake 350 for about 30 to 40 minutes
