Ingredients
3/4 cup all purpose flour
3 tbsp. unsalted butter, melted
1 tbsp. Spanish cream sherry
1/2 tsp. vanilla extract
pinch of salt
1 small egg (beaten very lightly)
olive-oil
 

Instructions
put the flour in a bowl& make a well in the center. Add the butter, cream sherry, vanilla extract, salt, and 1 tbsp of the egg. mix until dough forms. kneed the dough in the bowl until it is smooth. shape into a ball and wrap in plastic wrap; set aside at room temp. for 15 mins.
heat 2 inches of oil in a heavy-bottom skillet over high heat to 350 degrees or untill the cube of day old bread turns brown in 35 seconds. add 5-6 dough circles without overcrowding the skillet and deep fry the 45sec. turn them over with a large slotted spoon,and continue cooking untill circles are puffed on both sides& golden brown. transfer to cruumpled paper towels and drain very well.
on the counter put some flour and roll the fritos in it.
