     PEACH CARDAMOM UPSIDE-DOWN CAKE

Ingredients
8 oz. butter
1 c. brown sugar
8 peaches, sliced ¼” thick (skins on)
1 c. sugar
2 oz. butter
2 eggs
1 tsp vanilla extract
1 ½ c. AP flour
2 tsp baking powder
 
¾ tsp cardamom
1/4 tsp salt
½ c - 2 TBSP milk

Instructions
Mix 8 oz. butter and 1 c. brown sugar in a sauté pan until melted together. Add peaches and cook just until they begin to soften set aside.
Cream sugar and butter. Add, one at a time, the eggs and vanilla extract. Scrape the bowl after each addition.
In a separate bowl mix together the flour, baking powder, cardamom, and salt. Add 1/3 of this mixture to the creamed mixture. Mix just until combined, and add ½ of the milk. Mix just until combined, scrape the bowl, and add another 1/3 of the flour mixture. Add the rest of the milk, mix just until combined, scrape the bowl. Add the rest of the flower and mix just until combined.
Line a 9” pan with parchment paper, and spray the pan w/ non- stick baking spray. Arrange the peaches in the bottom of the pan, and pour the remaining syrup on top. Place cake batter on top of peaches. Bake at 325’F for approx. 40 minutes. (Check after 30). Let cool before unmolding.
