|
Pour turkey drippings after roasting into a pot and let separate. Spoon off fat and set aside.

Pour 2 Cups of turkey stock into roasting pan and heat on medium heat.
Add some cooked skin to flavor and color. brown.

|
Mix cooked stock and drippings together and sieve. Set aside.
Mix fat and flour together and cook until golden.
Slowly add drippings and cook over medium heat until thickened.

1 Tbls Fat - 1 Tbls flour - 1 C. Liquid
