     Manicotti

Ingredients
1 pkg. manicotti ( about 16 pasta tubes)
Sauce-
1 13oz. can tomatoes
1 6 oz. can tomato paste
1 1/2 C wter
1 1/2 C white wine
2 T brown sugar
1 clove garlic, minced
1 bay leaf
 
1/2 t oregano
1/2 t salt
1/4 t pepper
1 lb. pork sausage links, cooked and drained
Filling-
2 lb. ricota, 1/2 C parm cheese, 1 egg, 1/2 t salt, 1/2 t pepper
1/2 lb. mozzarella, grated, 2 T chopped chives

Instructions
Combine sauce ingredients, and simmer slow for 2-3 hours, adding more water if needed. Par boil manicotti 3-4 minutes in salted water.
Combine all cheeses with egg and seasonings. Mix well and stuff into manicotti shells using a small spoon.
Arrange in baking dish, and pour sauce over and bake 35 min. @ 350°.
