1 pkg. manicotti ( about 16 pasta tubes)

Sauce-
|
|
1 13oz. can tomatoes
|
|
1 6 oz. can tomato paste
|

1 1/2 C wter
|
|
1 1/2 C white wine
|
|
2 T brown sugar
|
|
1 clove garlic, minced
|
|
1 bay leaf
|
|
|
|
1/2 t oregano
|
|
1/2 t salt
|
|
1/4 t pepper
|
|
1 lb. pork sausage links, cooked and drained
|
|
Filling-
|
|
2 lb. ricota, 1/2 C parm cheese, 1 egg, 1/2 t salt, 1/2 t pepper
|

1/2 lb. mozzarella, grated, 2 T chopped chives
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Combine sauce ingredients, and simmer slow for 2-3 hours,
adding more water if needed. Par boil manicotti 3-4 minutes in
salted water.

|
Combine all cheeses with egg and seasonings. Mix well and
stuff into manicotti shells using a small spoon.
|
|
|
Arrange in baking dish, and pour sauce over and bake 35 min.
@ 350°.
