2 cups cooked chicken strips

1 can mandarin oranges, drained
|

1/3 cup slivered almonds, toasted

1/2 cup mayonnaise, light
|

2 tbsp fresh parsley, chopped

4 pita breads

8 leaves lettuce

Instructions |

|
Combine Chicken, oranges, almonds in a large bowl. Mix Mayonnaise and parsley and toss lightly with chicken mixture. Refrigerate for one hour.

Cut pita bread in half and place one leaf of lettuce with some chicken salad mixture just before serving.
|
|
|
To Toast Almonds- Spread almonds out on a cookie sheet and place in oben. Bake at 350 F for 5 to 7 minutes or until lightly toasted.
