Ingredients
2 smoked turkey legs
collard greens
salt and pepper to taste
 

Instructions
Put turkey legs in pot of water till boiling for 1 1/2 hours. Add more water as it boils down. Boil until they begin to fall apart.
Seperate leaves and rinse each leaf individually under cold water. Stack leaves on top of each other and roll together then slice into thin strips. Add greens to pot and allow to wilt. Stire every few minutes to distribute smoked meat taste. Taste to confirm the tenderness you prefer. About 1 hour to 1 1/2 hours.
