     Zucchini Flower Omelet

Ingredients
16 zucchini flowers
10 eggs
1/4 cup water
salt and pepper
1 tablespoon butter
1 cup goat/ricotta cheese
fresh herbs
 

Instructions
Wash zucchini and pat dry. Beat eggs and water together then add zucchini. Add salt and pepper. Melt butter in nonstick frying pan and when hot, add egg mixture. After a few minutes, when eggs begin to set, add piece of cheese all around. Continue cooking but do not allow to get dry. Stop cooking when still a bit runny. Garnish with herbs and serve.
