     Cold Beet and Yogurt Summer Soup

Ingredients
4 medium beets, boiled, tender, peeled, and quartere
2 cups yogurt
2 shallots, peeled and minced
1 tablespoon minced fresh dill
dash of cumin
salt and pepper
 

Instructions
Mix beets with yogurt, shallots, cumin, salt and pepper. Refrigerate 3-4 hours. Serve chilled and sprinkled with dill.
