Ingredients
1 cup spelt flour
1/4 cup brown rice flour
1/4 cup soy/amaranth flour - mix the flours if you don't have the right kind
1/4 cup chopped or ground nuts (any kind or sunflower seeds)
2 tsp baking powder
1/4 tsp sea salt
1 tsp stevia
3 large eggs
1 cup live yogurt
 
2-4 tsp canola oil
1 tsp vanilla extract

Instructions
Optional extras to experiment with adding are- 2 tbsp poppy seeds 1 tsp orange/lemon extract 2-3 tsp cranberry/black cherry concentrate
That's the basic recipe. Mix the dry ingredients together and then mix in the wet. spoon batter into muffin tins/paper cases. It should make about 10. Bake at 400F for 15-20 minutes until risen and brown on top. They don't stay fresh for long but freeze really well and defrost fast. If you put one in your bag when you leave for work, by the time you've arrived, it's ready to eat!
