     Open-Faced Chicken Sandwiches

Ingredients
1 loaf French bread
1 lb. fresh mushrooms, sliced
sweet onion, sliced
1 c. fat-free mayo
1/2 c. crumbled blue cheese
1/4 tsp. pepper
1 lb. grilled, sliced chicken
1 c. shredded mozzarella cheese
 

Instructions
Cut bread into 1-in slices and toast.
Meanwhile, saute mushrooms and onion for 15-20 minutes and set aside.
Combine mayo, blue cheese, and peppers; mix well. Spread blue cheese mixture over each bread slice. Top with chicken, mushroom mixture, and mozzarella cheese.
Broil from 4-6 in. for 3-4 minutes.
