     Beef Carrot Casserole

Ingredients
1 lb. ground beef
1 TBSP butter
1/4 cup minced onion
2 (8oz) cants tomato sauce
1 clove garlic
1 tsp. salt
1/4 tsp pepper
2 cups cottage cheese
1/4 cup chopped fressh parley
 
1 cup sliced cooked carrots
8 oz medium noodles, cooked and drained
1 cup shredded cheddar cheese

Instructions
Brown beef in melted butter in skillet. Add onion and garlic. Saute until meat is well browned. Stir in tomato sauce, salt and pepper. Simmer for 5 minutes.
Combine cottage cheese parsley and carrots. Add to cooked noodles and mix well.
Alternate layers of meat and cottage cheese mixture in greased 3 quart casserole. Beginniing and ending with noodles. Tiop with cheese.
Bake in a 350 degree oven for 30 minutes or until hot.
