     Vicky's Cold Sesame Noodles

Ingredients
1 lb. noodles (spaghetti, wheat flour noodles, whatever)
1/4 cup Asian Sesame oil (dark)
1/4 cup crunchy peanut butter
1/2 cup soy sauce
2 Tbsp. cider vinegar
1/4 - 1/2 tsp. cayenne pepper
1 tsp. sugar
3/4 tsp. pepper
3 cloves garlic, minced
 
4 cucumbers, shredded
carrots, thinly sliced/matchsticks

Instructions
Cook noodles. Rinse well until cool. Mix 2 Tbsp. soy sauce and 2 Tbsp. sesame oil. Combine well and refrigerate 1 hour.
Combine peanut butter with 1/4 cup HOT water. Mix rest of ingredients (except veggies) with the cooled soy sauce and stir until smooth.
Pour over noodles and toss well. Add veggies and serve immediately.
