     Cranberry-Walnut Cake

Ingredients
1 cup unsalted butter at room temperature
1 3/4 cups sugar
4 large eggs at room temperature
2 tsp vanilla
1 cup buttermilk at room temperature
2 3/4 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
 
1 cup chopped walnuts
1 1/2 cups chopped fresh cranberries mixed with 2 tbs sugar
ICING
8 oz cream cheese at room temperature
1/4 cup unsalted butter at room temperature
1 tsp vanilla
2 cups powdered sugar

Instructions
CAKE- cream together butter and sugar, beat in eggs, one at a time, add vanilla. Alternating flour mixture and buttermilk, just until blended. Stir in nuts and cranberries. Pour into two 9in round cake pans, greased and floured. Bake at 350 for 30-45 minutes.
ICING- cream butter and cream cheese. Add remaining ingredients. Do not overbeat.
