Melt chocolate bark in a heavy saucepan over low heat or in a microwave using a heat proof bowl. Stir to creamy consistency and spread in a thin layer onto a large sheet of waxed paper. Shape melted chocolate to ensure even thickness then let harden. Unwrap candy canes and place in large, resealable bag. Crush candy canes into tiny pieces and set aside. Melt vanilla bark as described above and stir to creamy consistency. Add crushed candy canes, peppermint extract and food coloring then stir until well blended. Spread vanilla and peppermint coating in thin layer on top of hardened chocolate layer, taking care with thickness and evenness then let harden. Using hands, break candy into pieces of desired size.
