Peel and dice potato, then boil until tender. Drain and mash; add sugar until mixture comes together to make a ball of dough. Spread half of the dough at a time on a flat surface sprinkled with a little more confectioners sugar; roll into a square about 1/8-inch thick. Spread with peanut butter, then roll dough up (like a cinnamon bun) and slice into 1/2-inch pieces. Cover and refrigerate until serving.
