     TCs Roast Pork with Black Beans and Yellow Rice

Ingredients
4-5 pound Boston Butt
Adobo Seasoning (Goya Brand)
3/4 cup Mojo Criollo
16 ounce package Vigo Yellow Rice
Mojo Criollo
2 cans Goya Black Beans
1 tbls olive oil
1 diced onion
2 garlic cloves, minced
 
2 Tbsp cumin
2 bay leaves
1/4 to 1/2 cup Mojo Criollo
Crystal Hot Sauce

Instructions
Preheat oven to 350. Generously season meat with Adobo Seasoning. Place in dutch oven or large pot with lid along with the mojo criollo. Cover and cook per package directions on met. 22-26 minutes per pound. Reserve any juices/sauce.
Cook rice per package directions.. HOWEVER .. do not use all water like the package calls for, use 1/2 water and 1/2 Mojo Criollo.
In a medium sauce pan over medium heat, saute onions in olive oil for about 10 minutes. Add garlic and cook for 2 minutes more. Add cumin. Add beans, bay leaves, and mojo criollo. Simmer for about 10 minutes, until beans are soft. Remove bay leaves and discard.
Shred pork. To serve - allow each person to add the desired amount of rice, then beans, then meat to a plate or bowl. Add desired amount of reserved pork liquid/gravey. Sprinkle with hot sauce.
