     Beef Fajita

Ingredients
8 lbs Beef Tips
48 ( 8in) Tortilla Shells
2 Large Onions, Julienned
4 Green Peppers, Julienned
1 number 10 Can Diced Tomatoes, drained
3/4 Cup Package Fajita Seasoning
1.5 lb. Mozzarella Cheese, Shredded
1.5 lb. Chedder Cheese, Shredded
 

Instructions
Cook beef in bag until tender, 1-2 hours. Drain most of the excess liquid.
Put shells in warmer
Shred beef; add onions, peppers tomatoes, and seasoning and steam covered until brought to temp (165F).
Serve 1/2 cup meat mixture on shells and sprinkle with 1oz of the cheese. Serve with Taco Sauce and/or Sour Cream.
