     Fettuccine Alfredo

Ingredients
1 lb fettuccine pasta
4 Tb butter
1 1/2 cups heavy cream (sub light cream?)
1 1/4 cups finely grated parmigiano-reggiano cheese
Chopped parsley
 

Instructions
In a large pot of boiling, salted water, cook the pasta until al dente. Drain and reserve 1 cup of pasta cooking water.
In the same pot, melt the butter over medium heat. Add the heavy cream and 1/2 cup of reserved pasta water. Bring to a simmer.
Add the cheese and the pasta and toss. Add more pasta water for a looser sauce if desired. Garnish with parsley.
