Cover chicken pieces with water. Bring to a boil. Reduce heat and simmer 30 to 40 minutes. De-bone if necessary - reserving broth. Shred into bite size pieces. Put chicken, broth, onion, celery, garlic, spices in pan and cook 5- 10 minutes. Cut tomatoes into bite size pieces and add to mixture. Cook 1 -2 minutes.
