     Prawn Fried Rice

Ingredients
2 cups rice, uncooked
3 eggs
1 shallot, sliced (or 6 chives)
2-3 cups veges (frozen peas, corn, bamboo shoots, grated carrot)
1 1/2 cups frozen prawns
chilli flakes
soy sauce
1/2 cup bacon, lightly fried (optional)
 

Instructions
Cook rice. Drain.
Whisk eggs in a small bowl. Cook in fry pan over medium heat until set. Remove from pan. Roll up and slice thinly.
Cook prawns over medium heat until thawed and lightly browned. Add shallott and rice. Cook until rice is dry. Add veges, sauce / chilli for flavouring. Add bacon (if using).
