Trim fat from egdes of meat, cut meat into strips approx 2 by 5 inches. Don't fuss about size, whatever.

Mix remaining ingredients well and pour over meat making sure to coat all sides of each piece. Marinate at least 3 hrs.

Drain well. Dray in dehydrator for 6 to 10 hrs. Depends on thicknesss of pieces. Watch carefully. Jerky should be leathery and dry clear through. This can also be done in over....go online to see how to do this.

To make spicy, leave out nutmeg and ginger and add dash of hot sauce.
2 1/2 to 3 lbs meat will fill trays nicely after it is trimmed.
