     Greek Chicken and Potatoes

Ingredients
1 Tbsp milk
4 skinless boneless chicken breasts
6 medium red potatoes
1 red onion
1 tsp chopped garlic
1 tsp oregano
3 Tbsp olive oil
salt & pepper
1/2 cup Feta cheese
 

Instructions
In a large skillet, heat milk. Add cubed chicken breasts, and brown quickly. In a separate casserole, combine potatoes, cut in chunks, red onion in wedges, chopped garlic and oregano. Toss with olive oil and season with salt and pepper. Bake in a 400 degree oven for 15 minutes.
Add chicken to casserole and bake for another 20 minutes until vegetables and chicken are tender. Sprinkle with crumbled Feta cheese and broil for a few minutes until cheese starts to melt and brown. Garnish with tomato wedges.
