     Aunt Pat's Chocolate Cheesecake

2 cups chocolate cookie crumble Or 2 premade chocolate cookie crumbel crusts
1/2 cup melted butter
1 tsp cinnamon
NOTE if you use the premade crust add the two cheese cake mixture
(3) 8 oz packages of cream cheese, soften room temp.
3 eggs
3/4 cups sugar
8 oz semi sweet bakers choclate (melted)
2 Tablespoons cocoa ( prefrance ghirardelli) others will work though
1 1/2 cups sour cream
1 tsp Vanilla
1/4 cup melted butter

Note that the first three lines are for if you intend to make the crust your self. Pre heat oven to 350F Mix crumbs with butter and cinnamon in a small bowl. Press firmly on bottom and partway up sides 10 in. use a spring pan.
wrap foil around outside of pan to keep butter from dripping place place on a cookie sheet. If you decided to use the pre made chocolate cookie crumble crust, mix the cinnamon into the cheesecake mixture and use two of them. . Mix the cream cheese until soft . Add eggs sugar chocolate and cocoa beat until smooth . Beat in vanilla . Stir in butter, pour into crust.
Bake at 325 for 40 min. Filling will be quiet soft and liquid in the center, it will set as it cools. Cool to room temperature before placing in refrigerator. While cake is still warm, run sharp knife around sides of cake.
I find that chilling 12 hours before slicing is best. (In spring form pan) Slicing - Cut each slice with a warm bread knife, clean before cutting another slice. Cut into quarters, quarter again - 8 slices. Removing cake from Springform pan- 1. Release sides. 2. Slide a long knife (warm bread knife), under cake. Slide cake onto plate.
