Ingredients
3 cups shredded zucchini (about 3 medium)
1 2/3 cup sugar
2/3 cup vegetable oil
2 teaspoons vanilla
4 eggs
3 cups all-purpose flour or whole wheat flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
 
1/2 teaspoon ground cloves
1/2 t easpoon baking powder
1/2 cup corsely choped nuts

Instructions
Heat oven to 350.Gease bottoms only 2 loaf pans,9x5x3 inches. Mix zucchini, sugar, oil, vanilla, and eggs in large bowl.stir in remaning ingredients.
pour into pan bake 50 to 60 minutesor unti tooth pick inserted in center comes out clean. cool ten minutes. loosen sides of loafs; remove from pans. cool completely before slicing
wrap tightly and store at room temperature up to four days,or refridgerate for 1o days 95 calories per slice.
