     Twice Baked Green Potatoes

Ingredients
8 large potatoes
1 head broccoli
4 c spinach
8 whole green onions (chopped)
1/4 c grated parmesan
2 tbl olive oil
1 1/2 tsp sea salt
pepper to taste
 

Instructions
Bake foil wrapped potatoes at 350 for 1 hr. Let cool. Steam broccoli for 15 minutes. Add spinach for the last 5 minutes.
Cut each potato in half & scoop out the middle, keep skin intact. Use a mixer to blend potatoes guts, broccoli, spinach, oil, parmesan, salt 7 pepper.
Scoop mixture back into potato skins. Bake at 350 for 15-20 minutes.
Sprinkle cheese on top and serve with ketchup.
