     Peach Pie

Ingredients
9 inch double crust
1 egg beaten
5 C sliced, pealed peaches
2 T lemon juice
½ C flour
1 C sugar
½ t cinnamon
½ t nutmeg
¼ t salt
 
2 T butter

Instructions
Brush some of the egg onto the bottom pastry. Place peaches in bowl with lemon juice. In a separate bowl mix flour, sugar, cinnamon, nutmeg, and salt. Pour over peaches and mix gently. Pour into crust, dot with butter. Cover with 2nd crust. Flute edges w/ fork dipped in egg. Brush remaining egg on crust . Bake 10 min at 450F, reduce heat to 350 and cook for 30-35 minutes.
