     Spinach-Ricotta Pie

Ingredients
1 pkg refirdgerated piecrust; or homemade
1 lb. ricotta cheese
3 beaten eggs
1/2 lb chopped spinach
1 sm onion, diced
1/2 tsp. salt
1/2 tsp. basil
3 tbsp flour
1/2 c. sharp cheddar cheese, grated
 
Optional sour cream for topping
1/4 tsp. black pepper

Instructions
Use a 9 in pie plate or 2 smaller ones. Saute in butter the onion and spinach, with black pepper, salt and basil. Mix everything together (EXCEPT sour cream) blending well, and pour into unbaked pie shell. Top with 1 c. sour cream spread to edges of crust and sprinkle with parika. Bake at 375 degrees for 40-45 minutes.
