     Carrot Cake

1 1/2 Cup Oil
2 Cup Sugar
4 Eggs
2 TSP Baking Soda
2 TSP Baking Powder
2 TSP Cinnamon
1/2 TSP Salt
2 Cup Flour
1/2 Cup Pecans
3 Cup Carrots - Grated
1 TSP Vanilla

Blend oil and sugar; add eggs one at a time. Beat well.
Sift dry ingredients and add to first mixture. Stir in pecans, carrots and vanilla.
Bake in three pans at 350 for 30 minutes.
