     Chili for the Chileans

Ingredients
2 1/2 pds. venison or beef cubed
2 large onions, diced
6-8 large garlic cloves diced
1 14 oz. can diced fire roasted tomatoes
1 7 oz. can green chilies
1 10 1/2 oz. can beef consomme
1 jalepeno diced
1 t. thyme
1 t. oregano
 
2 t. ground cumin
2 T. chili powder
2 ears roasted corn, removed from the cob

Instructions
1. Brown the meat in a heavy dutch oven. Remove and set aside. 2. Saute the onions in the same pot with a little oil. 3. Add the garlic and saute for two or three minutes. 4. Add the remainder of the ingredients and cook in a covered pot for 3-5 hours in oven at 225 degrees. Low and slow will break down the meat to make it tender without making it dry. Add some water during the cooking if you would like more broth.
Top this with all the usual suspects, cheese, onions, sour cream, cilantro etc. Serve with corn bread, cheese bread or hell, just crackers…come on…it’s chili. This can be made vegetarian by using butternut squash instead of the meat. Brown it and add it after an hour or two of cooking the other ingredients together. ingredients, Then decrease the cooking time until the butternut is soften.
