     Brazilian-style Collard Greens

Ingredients
Big bunch of collard greens
2 or 3 cloves of garlic, crushed
1/2 teaspoon salt
2 tablespoons olive oil
 

Instructions
To prepare collards for cooking- Rinse leaves well. Pull large center stem out of the large leaves as they are bitter. Stack 3 or 4 leaves and roll leaves up like a cigar and slice into thin (1/8 inch) shreds. Repeat until all the leaves are shredded.
Mix salt into crushed garlic to make a paste. Heat up oil in a large saute pan or frying pan over medium heat and then add garlic and salt mixture. Saute briefly, then add greens and cook over medium-high heat for three or four minutes, until wilted but still bright green. Adjust seasoning with salt and pepper.
