     Carmel Popcorn

Ingredients
2 sticks of butter (must be butter)
1 box brown sugar (dark)
1 cup white corn syrup (1/2 bottle of corn syrup is in between the K on the bottle)
1/2 tsp. salt
1 tsp. baking soda
 

Instructions
The amount of popcorn is the tricky part. I pop as much corn to fill a brown paper grocery bag. About 4 inches above the top. (As I pop it I make sure the seeds are not included so I try to sift through it) I put 1/2 the bag in a large square turkey roaster.
In a 3 qt. kettle melt all the ingredidents. Except the baking soda. Bring to a rolling boil on medium heat and boil for 5 minutes, stirring continually.
Remove from the heat and add 1 tsp. baking soda and stir. This will make it caramelize and swell to double the amount. When you have it all stirred in and it is completely all caramelized pour over the popcorn. Stir this in to the popcorn coating all of the kernels.
Bake for 1 hour at 225. Stir every 15 minutes. I usually get 3 gallon bags out of 1 batch. (When you start to bag the popcorn you need to work fast as the popcorn will harden on the sides and then break up quickly trying to get it out of the pan.
