     AVOCADO/ROASTED CORN SALAD

Ingredients
2 large ears fresh corn (I use frozen corn)
Olive Oil
1 small green or red bell pepper
1 bunch green onions
1 large avocado
1 large tomato, peeled and seeded
Dressing- 1/2 CUP CILANTRO LEAVES, CHOPPED
1/2 TEASPOON GARLIC POWDER
 
1/4 CUP BOTTLED ITALIAN DRESSING
1 MINCED SERRANO CHILI
1 SMALL LIME, JUICED

Instructions
In small pan, roll corn ears in small amount of olive oil. In preheated broiler, broil 4 minutes on each side. Remove from oven and cool. Cut corn from cob, chop pepper, onions, avocado and tomato and combine.
Combine all dressing ingredients and pour over vegetables. Refrigerate until serving time.
