     Chicken and Gnocchi Soup

Ingredients
1 large onion diced
1/4 Cup butter
1/3 Cup Flour
5 Cups Water
1 Can Condensed Cream of Chicken Soup
3 Tablespoons of Chicken Base or Bouillon
3 Cups sliced Carrots
3 Cups sliced Celery
3 Cups sliced Mushrooms
 
4 Cups of Chopped Chicken Breast Cooked
1 Package Gnocchi

Instructions
Saute onion and butter, until translucent, stir in flour until a paste, cook for 3 minutes.
Mix base or bouillon to water and add to the flour and onion paste (roux).
Add Soup, vegetables, chicken and gnocchi.
Bring to boil and turn to low medium for 30 – 45 Minutes until vegables are tender. Optional fresh spinach may be added.
