10 Large Jalepeno Peppers - halved and cleaned out
6 oz Laughing Cow cheese
1 C Mozzerella or Jack Cheese - grated
1 C. Milk
4 Eggs beaten
1 1/2 C Italian bread crumbs
1 C All Purpose Flour
Spice Mix
2 1/2 Tbl Paprika
1 tsp Cumin
2 Tbls Salt, Garlic Powder
1 Tbl Onion Powder, Cayenne, Oregano, Thyme
1 lb Ground Hot Sausage - fried and crumbled
1 C Chives - chopped
6 strips Bacon - fried and crumbled
Olive Oil for frying
Instructions
Halve, making sure to include stem and end, and clean out 10 Jalepeno peppers, set in cold water. Roast seeds and set aside, be careful not to rub your eyes.
Fry Bacon and Sausage, drain, crumble in a bowl.
Add Laughing Cow cheese and Chives and mix well.
Add grated Mozzeralla or Jack cheese and blend.
You can now add roasted Jalepeno seeds for additional hotness if desired.
In a small ziplock bag or spice jar, mix all the spices, you will need 8 tsps. Put Milk in bowl and add 2 tsp of mix. To another bowl of Bread Crumbs, add 4 tsps of mix. Finally add 2 tsp to Flour. Make sure all 3 are blended well.
Over -pack Jalepeno halves with mixture. Then dip in milk, dip in flour and set aside for 10 minutes to dry. Next dip in beaten eggs and roll in Bread Crumbs until thoroughly covered.
Fry until brown in Olive Oil.

Serve as an appetizer. Great with Beer!
