Whip together ingredients for manicotti and refrigerate for at least 30 minutes.

Mix together ingredients for filling.
|
|
|
Preheat oven to 350 degrees.
Lightly grease a 6 inch iron skillet. Measure about 3-4 tbsp batter and pour into hit pan. Move batter around evenly and cook until batter is no longer wet.
Tip over onto cook rack

Fill .25 cup of ricotta filling and place in middle of manicotti. Ladle sauce on bottom of 9x13 pan. Roll up manicotti and place folded part down on top of sauce. Continue to do this until pan is filled.
Top with additional tomato sauce and sprinkle with grated cheese.
Bake 30-45 minutes until bubbling.
