Ingredients
3 eggs
1/2 cup sugar
1 cup heavy cream
1 1/2 cup graham crackers
juice and rind of 1 lemon
 

Instructions
Mix egg yolks, sugar, lemon juice and rind Cook over hot but not boiling water.
Stir constantly until thick as heavy cream Remove from heat and cool
Mix into the cool custard, the egg whites which have been beaten to form soft peaks and the beaten heavy cream. Do this gently, folding
Roll crisp graham crackers between wax paper One half on bottom of ice cup tray- 1/2 on top Fridge until firm in your refrigerator
