8 oz. pkg. angel air pasta
|
|
2 (14 oz.) cans diced tomatoes
|
|
1 T. extra virgin olive oil
|
|
2-3 chicken breats, cut in small pieces
|
|
1 small red bell pepper, diced
|
|
1 small onion, diced
|
|
1 t. salt
|
|
1 t. dried basil
|
|
1 t. oregano
|
|
|
|
2-4 heaping T. chopped garlic
|
|
1-1/2 C. tomato juice
|
|
parmesan cheese to garnish
|

|
|

Instructions |
|
|
Cook pasta, drain tomatoes, save juice.
|
|
|
Heat olive oil in large skillet over medium high heat and saute chicken, pepper and onion until chicken isn't pink and vegetables have softened.
|
|
|
Stir in salt, basil, oregano, garlic and tomatoes. Stir in enough reserve tomato juice to make a thin, light sauce.
|
|
|
Reduce heat and simmer uncovered for 20 minutes. Add more tomato juice if necessary. Serve over pasta.
