     An Apple A Day Pork Chops

Ingredients
2 tablespoons freshly minced rosemary
¾ teaspoon salt
¾ teaspoon pepper
6 (4 ounce) boneless, center cut loin pork chops
Cooking spray
2 teaspoons olive oil
1 ½ cups chopped Braeburn or Rome apple
½ cup golden raisins
½ cup dried currants
 
¾ cup Marsala wine or apple cider

Instructions
Combine first 3 ingredients; rub evenly over both sides of pork chops. Coat pork chops with cooking spray. Place large nonstick skillet over medium-high heat. Add pork chops; cook 5 minutes on each side. Remove from skillet and set aside.
Heat oil in skillet over medium-high heat. Add apples, raisins and currants; cook 5 minutes, stirring frequently. Add ¼ cup wine, bring to a boil. Cover, reduce heat and simmer 20 minutes or until done.
