     Jewish Apple Cake

Ingredients
5 cooking apples
2 teaspoons cinnamon
2 1/3 cups sugar, divided
1 cup pareve margarine
4 eggs
3 cups sifted flour
3 teaspoons baking powder
˝ teaspoon salt
1/3 cup orange juice
 
1 ˝ teaspoons vanilla extract
1 teaspoon almond extract

Instructions
Peel and quarter apples, core and slice. In mixing bowl, combine apples, cinnamon, and 1/3 cup sugar. In mixing bowl, combine margarine and remaining 2 cups of sugar. Cream at medium speed until fluffy. Add eggs, one at a time, mixing well after each additions. Stir together flour, baking powder and salt; add to batter. Add juice and extracts. Continue mixing until batter is smooth. (It will be thick.) Place a small amount of batter in bottom of greased and floured 10-inch tube pan. Arrange a layer of apple slices over batter; continue layering, ending with a layer of batter. Bake at 350 degrees for 1 ˝ hours or until cake tests done. Cool on wire rack. Dust with confectioner’s sugar or drizzle with frosting glaze, as desired.
